Kale is one of Carla and Anne Maries favorite vegetables. One cup of chopped kale contains as much calcium as 2/3 cup of milk, and its highly absorbable. A cup also has 134% of the daily recommendation for Vitamin C, 206% of Vitamin A, and 684% of Vitamin K. Thats six times the daily value for Vitamin K, which helps improve bone density. Kale is also a good source of copper, potassium, iron, manganese, and phosphorus. And it contains antioxidants that have been shown to fight cancer. Kale is also rich in lutein and zeaxanthin compounds, which promote eye health. And the fiber in kale binds bile acids and helps lower blood cholesterol levels.

But now that youre convinced kale is a super food, you may not know what to do with it. Carla and Anne Marie have some ideas. First of all, if youve tried kale and found it bitter, you can massage the leaves to make them sweeter. They not only demonstrated that technique, but let us taste the results. The Most Common Lyme Disease Symptoms:

Borrelia burgdorferi bacteria that is transmitted by the tick or insect can spread throughout the body and cause a series of autoimmune-like reactions. Research done by the Department of Rheumatology at University of Würzburg in Germany shows that symptoms of Lyme disease are far-reaching and commonly affect the skin, heart, joints and nervous system.

Symptoms and signs of Lyme disease include:

  • A temporary butterfly skin rash that appears where the tick bite occurred . Many, but not all, develop a rash shaped like a bulls eye that appears as a red ring around a clear area with a red center. The CDC reports that around 70 percent of Lyme disease patients develop this rash
  • Flu-like symptoms, especially shortly after being infected. These include a fever, trouble sleeping, neck pain, fatigue, chills, sweats and muscle aches
  • Poor sleep, chronic fatigue and lethargy
  • Digestive issues, including nausea and loss of appetite
  • Achiness and joint pains. The CDC has found that around 30 percent of Lyme patients develop symptoms of arthritis
  • Long-term many people experience mood changes, included increased depression and fatigue
  • Cognitive changes are also a long-term symptom and include forgetfulness, headaches, brain fog, misplacing things and trouble concentrating

    Why is Lyme so hard to detect and recover from, even after antibiotics? Here are three main theories:

    Problem 1: The Lyme bacterium is a survivor

    Lyme bacteria knows how to stay alive inside its host. It suppresses the immune system, which allows it to survive and multiply. Lyme also seems to have the ability to cloak itself, making itself invisible to our immune system. In fact, Borrelia is so smart that some research suggests that when it senses its being attacked, it can go into a dormant state, allowing it to live and survive against the onslaught of antibiotics. Other studies suggest that Borrelia can actually mutate its own genes to make it resistant to antibiotics.

    Problem 2: Diagnosis is tricky

    Only about half of all Lyme patients actually remember getting a tick bite. Plus, the classic bulls-eye rash that people associate with Lyme may not appear in all cases, or may appear somewhere the victim never sees, such as on the scalp, hidden by hair. Some research suggests that conventional Lyme tests may not be sensitive enough to make an accurate diagnosis, especially during the later stages of disease. False-negative results are also common.

    Sugar

    The biggest restriction for any Lyme Disease diet recipe is sugar. Sugar promotes inflammation in the body and wreaks havoc on the immune system. Cancer cells feed on sugar. And, so does the bacteria that causes Lyme Disease.

    Sugar is a double-edged sword. Not only does the harmful bacteria feed on it, so, too, does yeast. Talk about a one-two punch to the gut!

    Sugar is a big no-no for anybody with Lyme Disease. If youre prone to Lyme flare-ups, be honest with yourself. Ask yourself the following:

    • Are you eating a healthy Lyme Disease diet?
    • Do you avoid eating foods and drinks with added sugars?
    • Is your fruit intake limited to a small-serving of berries and other low-sugar fruits such as avocados and grapefruit?

    Grains can promote inflammation. You may not think of brown rice as an evil sugar like regular soda, but grains can be broken down by the digestive system into simple sugars.

    If your gut bacteria ratio is not optimal, the yeast can feed off the rice, pasta, bread and other high-starch carbs. This yeast overgrowth can, in turn, promote inflammation in the joints.

    Vegetable Oil

    Another Lyme Disease diet restriction is vegetable oil. Vegetable oils are polyunsaturated fats that are high in Omega-6 fatty acids.

    Omega 6s arent necessarily bad for health, but there are two problems with them. First, most people have an unhealthy ratio of Omega-6s to Omega-3s, consuming far too many 6s and not enough 3s.

    It was a very full year with a lot of twists and turns. I know I havent written much but there is a good reason for that. After completing my grueling work/study year with the Nutritional Therapy Association last November 2017 I just couldnt bring myself to write much of anything. Nada! Zilch!     Lyme disease is an infectious disease caused by the bacteria Borrelia burgdorferi. B. burgdorferi is transmitted to humans by a bite from an infected black-legged or deer tick. The tick becomes infected after feeding on infected deer, birds, or mice.

    A tick has to be present on the skin for at least 36 hours to transmit the infection. Many people with Lyme disease have no memory of a tick bite.

    Lyme disease was first recognized in the town of Old Lyme, Connecticut, in 1975. Its the most common tickborne illness in Europe and the United States.

    People who live or spend time in wooded areas known for transmission of the disease are more likely to get this illness. People with domesticated animals that visit wooded areas also have a higher risk of getting Lyme disease.
